Barley is considered to be a versatile grain due to its health benefits. Nutritionally they are very rich. Its fiber content makes it more preferable to be included in the Diet for Weight Loss.

Along with being high in fiber they are also diuretic in nature, Helps in throwing out extra water from the body further helping in reducing retention and getting rid of water weight. Including 2-3 glasses of Barley water in the diet for weight loss helps in reducing water retention. The barley grains left after straining the water can be used in the below mentioned salad, can be added to daals, khichdi’s etc  to make the diet for weight loss further effective.

Along with Fibers, they are a good source of Vitamin B complex and Minerals like manganese, magnesium, selenium, copper, phosphorous, chromium, molybdenum.

Serving:

7 Salad Bowl

Ingredients Required:

  • 550 grams Eggplant chopped
  • 600 grams Zucchini chopped
  • 150 grams red capsicum (Bell Pepper) diced
  • 1/2 teaspoon salt
  • 150 grams Jau (Barley) cooked
  • 2 tablespoons Pinenuts
  • 30 grams Tomato
  • 1/4 cup basil leaves chopped
  • 2 tablespoons Balsamic vinegar
  • 1/2 tablespoon olive oil

How to Make:

  • Heat oil in a non stick pan
  • Add chopped vegetables
  • Cook till tender
  • Add remaining ingredients
  • Mix well
