Quick and Easy Diwali Sweet Recipes

Baked Multi grain Karanji (Serves 2)

Diwali Recipe

Ingredients:

For outer layer

  • 1 1/2 Cup Multi Grain Flour
  • 10 Grams Ghee
  • 1/8 teaspoon Salt

For Filling

  • 1/8th Cup Almonds, Coarsely Powdered
  • 1/8th Cup Pistas, Coarsely Powdered
  • 1/8th Cup Raisins, Cut into halves
  • 1 Teaspoon Cardamom Powder, Freshly powdered
  • 1 Teaspoon Flaxseeds
  • 1 Teaspoon Pumpkin Seeds

Recipe:

  • Preheat the oven to 180 degree Celsius
  • Combine the Flour, Ghee and salt in a bowl, mix it until the mixture resembles a coarse meal
  • Sprinkle water onto the crumbly dough and with your hands push the dough from the sides to the middle of the bowl to form a ball that holds together and is smooth
  • Be careful to add only a little water at a time, and not allowing the dough to become soggy. Knead well with your hands until the dough becomes into a firm ball of smooth dough
  • Cover the dough and allow it to rest for an hour
  • Combine all the ingredients for the filling until all the ingredients hold together. Divide the filling mixture into 2 equal portions. Divide the dough into 2 equal portions as well
  • Keep a small bowl filled with water by the side. On a floured surface roll each portion of the dough into a 3-inch diameter circle
  • Place a teaspoon full of filling mixture onto one-half of the circle. Wet your fingers into the bowl of water and spread a little water around the edges of the circle
  • Gently fold the circle into a semi-circle, forming a half moon shape. Seal the edges by pressing slightly, so that the dough sticks to each other making sure the entire filling is still concealed inside
  • Decorate the edges by twisting the dough portion carefully to form a twisted shape. Continue the same procedure with the other dough and filling portion
  • Arrange the filled Gujiyas/Ghughras on a baking sheet and place it in the preheated oven.  Bake the Gujiyas in the oven until it is browned evenly on all sides
  • Half way through turn them around so they get browned on all sides. This process can take about 20 to 30 minutes
  • Serve these delicious and Healthy Baked Multi grain Karanjis

#2. Peanut Butter Oats Bites (Serves 2)

Diwali Recipe

Ingredients:

  • 1 Teaspoon Unsalted Butter
  • 2 Tablespoons Peanut Butter
  • 3 Tablespoons Honey
  • 1/4 Teaspoon Vanilla essence
  • 1/4 Cup Muesli
  • 1/8 Cup Oats
  • 1 1/2 Teaspoon Raisins
  • 1 1/2 Teaspoon Chocolate Chips
  • 1 1/2 Teaspoon Dry roasted salted peanuts,  Coarsely Grounded

Recipe:

  • Melt butter in a medium saucepan over medium heat
  • Remove pan from heat and stir in peanut butter, honey and vanilla. Stir in Muesli and Oats and allow mixture to cool
  • Stir in raisins and chocolate chips. Form mixture into 1-inch balls, then roll each ball in chopped peanuts, pressing to coat
  • Store in refrigerator.
