Chilled Avocado and Cucumber Soup

Ingredients :

  1. 1/2 Medium Avocado peeled & cubed
  2. 1 Medium Cucumber peeled & cubed
  3. 3/4 Cup Milk
  4. 2 Table_Sp Coriander
  5. 2 Medium Onion chopped
  6. 2 Cup Vegetable Stock
  7. 1 Table_Sp Lemon Juice

*Add to taste: Salt, Pepper

 

How To Make It: 

  1. In a blender or food processor blend the first 5 ingredients, until smooth.
  2. Add the lemon juice, salt and pepper and as much vegetable broth as you want to make the desired consistency.
  3. Serve chilled.
