Chilled Avocado and Cucumber Soup
Ingredients :
- 1/2 Medium Avocado peeled & cubed
- 1 Medium Cucumber peeled & cubed
- 3/4 Cup Milk
- 2 Table_Sp Coriander
- 2 Medium Onion chopped
- 2 Cup Vegetable Stock
- 1 Table_Sp Lemon Juice
*Add to taste: Salt, Pepper
How To Make It:
- In a blender or food processor blend the first 5 ingredients, until smooth.
- Add the lemon juice, salt and pepper and as much vegetable broth as you want to make the desired consistency.
- Serve chilled.
